The Wait Is Over! Edgewater’s Anticipated Income Tax Opens Today

After usual delays, one of the year’s most anticipated bar openings will finally give Edgewater another option in both drinking and dining. After previously hoping for a Summer, 2016 opening, Income Tax at 5959 N Broadway will finally open their doors tonight.

After a long process including getting a liquor moratorium lifted, owner Nelson Fitch will see his dream become reality. In a simple post on Income Tax’s Facebook page yesterday, they said, “We did it. See you tomorrow, Edgewater.”

Though Income Tax’s focus will be on specialty wines and craft cocktails, there will also be a food menu which will feature interpretations of classic dishes that compliment the wine regions they are focusing on: Spain, France, Italy and Germany.

Executive Chef Ryan Henderson (Alder, Empellon Cocina, Momofuku, Maple & Ash) will be at the helm of Income Tax’s kitchen preparing food that is “flexible, serving those looking for a quick bite to eat after their commute, a full meal, or a few plates to share.”

Fitch said that all the wines will be from independent producers. He said the cocktail list, “will be mostly Old School classic cocktails from 100 years ago. We are looking for (cocktails that are) a little lesser known. For example, the Income Tax is not hugely known.” The cocktail is traditionally a blend of gin, dry and sweet vermouth, orange and bitters, but Fitch said he has changed it up a bit.

Fitch worked with architect Jennifer McCord of Partners By Design for the remodeling. The 1,700 sq. ft. space will seat about 50.  The atmosphere is planned to have an unpretentious, casual vibe where both wine enthusiasts and novices can enjoy themselves.
