By: Sandy Andina http://edgevillebuzz.com/news/residents-pass-whole-foods-liquor-license-reps-unveil-plans#comment-10089 Tue, 07 Oct 2014 01:54:00 +0000 http://edgevillebuzz.com/?p=20840#comment-10089 It’s less “renovate” than “retrofit.” Whole Foods stores infrastructures differ from conventional supermarkets: the layouts are very different, there are features such as barbecues, wine bars, sushi/stir-fry counters, and even brasserie/microbreweries and coffee roasters that require structural alterations for ventilation and energy use, the flow of the store doesn’t necessarily follow the “basics on the perimeter” model. Then there’s the issue of parking–only a few (such as the retrofitted former Wild Oats in s, Evanston, which lacks many of the more modern WF amenities) have single-grade-level outdoor parking lots adjacent; most have either rooftop (central Evanston), multilevel garages (a la Lincoln Park & Lakeview) or underground plus grade-level (Sauganash). This is NOT going to be a gussied-up, high-priced Dominicks, and amen to that!

Whole Foods should do quite well here. It makes me wonder how crappy the store’s facilities became that they now have to spend so much money to renovate.
