Edgewater’s Legendary Cookies And Carnitas To Make Triumphant Return

Since temporarily closing almost three years ago, Cookies and Carnitas assured its customers that it would reopen the business after the owners were able to reorganize a bit. After months of rumors and anticipation, the business has finally announced plans to open the business once again in a slightly different format.

Well known for the delicious farm-to-table food at both their Edgewater restaurant and Green City Market booths, Cookie and Carnitas owner Brad Newman built a stellar reputation for delicious food. His other project, a school lunch program which became a passion for him, proved to be inspirational but also a lot of hard work. Then after staffing issues and his mother’s death, it was decided to scale back for a time.

In an interview three years ago Newman told EVB that at the time he was a little over his head, however in a good way.  He added, “I’m hoping to continue to grow. Anybody who has walked into Cookies and Carnitas can tell that it is a shoestring. People love it. Not only will we eventually re-open the restaurant, but we will also be opening up new stuff in the area, staying local to Edgewater.”

Newman is now making good on that promise, reopening the eatery as Brasserie by Cookies & Carnitas two blocks north of where the original space was at 5940 N. Broadway. According to Chicago Eater, the reincarnation will be a fun take on French brasseries using Mexican flavors. Fans can expect all the innovative cooking that the restaurant was famous for in the new spot with a bakery-coffee shop on one side and a restaurant-bar on the other.

Newman, who worked at upscale restaurants like Charlie Trotter’s and Tru, plans on taking the dining experience up a couple levels without losing touch of the freestyle Mexican fare that made the old restaurant legendary. The menu will keep its innovative flavors with large portions of meat, fish and slow-cooked items taking center stage.

Brasserie by Cookies & Carnitas is hoping to open this August or September.
